From Scratch Lemon Pepper Fish
This is a simple recipe to make fresh grilled lemon pepper fish on the grill.
Juice from at least 3 lemons
Black Pepper as little as much as you like
Butter about a half a stick
Pinch of Salt
3-6 fillets from you favorite I usually use spot or croaker
Get you grill nice and hot I like to add wood chips to to give the fish a smoky flavor. Take about a 18" x 18" sheet of aluminum foil and twist up the edges so the butter and lemon juice stay in with the fish and then spray with a little Pam. Take your fish fillets place them in the foil with the butter and lemon juice and then salt and pepper to your taste and shut the grill lid and Leave It Shut for at least 15min so the smoke and steam from the juice and butter can really soak in to the fish. Depending on the size of the fillets and the max temp of your grill you will have fish ready to eat in 15-35 mins.
Lakes are at last thawed, can't wait to go out and start nailing the bass.
