Mango Pickerel and Black Beans

I came across several reciepes over the years and wrote down in a out-doors book im slowly working on. My favorite by far is Mango Pickerel over Black Beans!!  there are a couple i love so i will share them now with you!  The reciepes are as followed.  enjoy.

Mango Pickerel Over Black Bean:

-1 onion                         -2 cloves of garlic

-4 pickerel fillets.          -   salt & pepper   and some virgin olive oil.

Mango salad:

1 ripe mango, diced    -    1 jalapeno, diced.    -   1 shallot, fine diced.   -   1/4 cup Un sweetened coconut milk.

Juice from 1 lime.        -    1 tbsp honey             -   pepper                          -   1 tbsp of virgin olive oil.

Black Bean stew:  

4/5 strips of diced baccon.      - 1 onion, diced.    -  1 clove garlic, diced.   - 4 cups of black beans

1 cup of cherry tomatoes    and a dash of salt and pepper.

Set your oven at 350.   layer onion and garlic in a pan,  toss on fish. add your salt and pepper. roast untill fish is cooked/ or you can fry in oil or i prefer lard.

Combine Mango,  jalapeno, shallot, coconut, lime, honey and oil. and let sit for atleast 1 hour.

Saute baccon, onion and garlic in a pan untill soft.  Add beans and tomatoes.  Then add your salt and pepper, cook untill heated 

Serve to plate add fish topped with mango salad!   goes well adding roasted potatoes or a greek salad,  But you can mix it up any way you wish.   this is my favorate way to cook pickerel besides an open fire and lard!.

Right now at this very moment i am wrapping guides , doing some intermediat's, and framing my guides in black silk.  so seeing as this 000 thread can make one crazy after a couple days of  solid wrapping i welcome a chance to talk about

SILK fly lines

Hey guys I still have a couple silk lines that are new left if any one is intrested?   all hand done my me.  I also make cane rods.  so i fished with bamboo and silk's for a number of years now.

Hello im a fly fisherman. I fish with old and new patterns.I also make bamboo fly rods. With silk fly line ofcourse. and thats what i use aswell. im from ontario. i also make first nations branch flutes so i do well at making/building. i also like to tie old fancy spey flys. classic fly fisherman.
