Salmon Recipe From Kristine Hutchinson from Surrey BC

A friend from work mentioned she wanted to do some salmon for herself and her boyfriend for dinner. Salmon you say ? I have a ton in the freezer, so I told her I would bring her some. Nothing is cooler then hearing back about successful meals created from your catch. Here's Kristine's recipe.

This recipe makes for a quick easy meal to throw together with ingredients that are usually hanging around the house anyway. 

All you need is:

Salmon (I used probably 1.5lbs to do this dish but it will work with bigger and smaller cuts as well.)

3 Lemons1 Green Pepper, Chopped
1/2 Yellow Pepper, Chopped
1/2 Red Pepper, Chopped
1 Yellow Onion, Chopped
Fresh Dill to taste, Chopped (I coat the entire Salmon in a layer of it)
Salt and Pepper 

Preheat Oven to 325 degrees. Place a large sheet of tin foil on a baking sheet and place fish in the center.  Layer green pepper, yellow pepper, red pepper and onions ontop and around fish, then put a layer of fresh dill overtop.  Sprinkle Salt and Pepper to taste. Cut one lemon in half and squeeze both halves over top of entire Salmon. Then cut another lemon into slices and place slices ontop of fish.  Wrap entire salmon in the tin foil, make sure the seal is pretty tight to trap steam.  Bake for 30-40 minutes, or until salmon is flaking and cooked all the way through. Remove from tin foil, cut into desired portions. Serve with your choice of side.

I usually serve it with Basmati rice, caesar salad or garlic mashed potatoes. Cut remaining lemon into wedges and serve on the side as well.

If you don't have yellow or red peppers laying around I will often just use 2 green peppers.  I will also use dry dill as an alternative for fresh dill if necessary, but fresh dill tastes much better if I can get my hands on it.
