Bacon Makes Everything Better !

This is one of my favourite times of year to fish Alouette Lake. The Kokanee fishery heats up and makes for fun easy fishing for these small scrappy land locked version of the Sockeye Salmon. Over and above the entertainment factor this fishery provides ... If you like to eat fish you don't want to miss out when the bite turns on. Kokanee makes for an awesome table fish. It can be cooked a variety of ways but today I want to share this recipe. This recipe can be used for all species of fish.


You will need :

Fish ( one to two Kokanee per person )
Mushrooms Couple handfuls
Medium Onion
Bacon ( Two slices per Fish ) Or more if fish is Bigger
Uncle Bens Quick Cook Rice packs
Butter
Salt and Pepper




Step 1 :


Cook Rice pack as indicated on package and place in bowl to cool ....







Step 2 :


Cook bacon strips till translucent and place on plate with paper towel to cool and absorb fat.







Step 3 :


Slice onions, mushrooms, and cook in pan with a bit of butter till cooked to desired texture and taste.





Step 4:


Once cooked and cooled. Add Rice to Mushroom and Onion Mixture. Stuff fish with desired amount of mixture and wrap with two slices of Bacon. Place on cookie sheet covered with aluminum foil. Coat aluminum foil with a thin coating of butter. I find this prevents the fish from sticking.







Step 5 :



Place in preheated oven ( 350 F ) and cook for 15 minutes. Remove and serve with your choice of sides.





Here served with some Caesar Salad and zucchini ... good stuff ! Try it out !
