Serves: 6 to 8 Prep time: 10 minutes Cook time: 2 hours Total time: 2 hours 10 minutes Ingredients: 1 stick butter 1 cup chopped onion 1 cup chopped green bell pepper ½ cup chopped celery ½ cup chopped green onions 1 tablespoon minced garlic 1 (10-ounce) can Ro-Tel green chilies and tomatoes 1 (6-ounce) can tomato paste 2 tomato paste cans of water 1 pound andouille or smoked sausage, sliced 2 pounds turtle meat Creole seasoning Cayenne pepper Salt Worcestershire sauce Directions: 1. Melt butter in large pot. Add onion, bell pepper, celery, green onions and garlic. Cook over medium heat, stirring constantly, about 20 minutes. 2. Then add the Ro-Tel, tomato paste and 2 cans of water. Simmer 40 minutes over low heat, then add the sausage and season to taste with Creole seasoning, cayenne pepper and salt. 3. Add the turtle and cover. Simmer 1 to 1 ½ hours over low heat. 4. Serve over cooked rice.
