RECIPES COD Posted Nov 28, 2010 By: Tsquared Leinenkugel's Honey Cajun Fish Recipes Over the years I have come across many of fisherman with last years catch still in the freezer. coming from a large family that loves to eat fish I have always found this to be impossible to do. Nothing better than family, friends and fish From the catching to the preperation it brings us all together with one common goal and interest. FISH...Oh an eating fish too. Now I eat sushi about four days out of the week, but every now and then I like to put in a little effort and cook my fish. Just like catching the fish, my cooking I keep simple as well. I prefer a batter fried fish than breaded or coated. The following is a simple recipe that has never failed me. Now keep in mind not everyone catches the size fish that we do here in the midwest, nor do they catch as many so feel free to adjust the ingrediants as you see fit to meet your catch. First choose your fish of choice, or don't we usually fry them all. Keeps us fishing for more. "Around" 2 cups of flour 1 12oz. bottle of Leinenkugel's Honey Weis Beer, fresh of course so Josh and I made a trip to Chippewa Falls for a fresh case. We said Hi to Jake for ya. 2 fresh organic egg whites " I figure if I'm going to be picky about my beer, why not the eggs" McCormick, Perfect Pinch Cajun Seasoning, this should be added to chef's desired taste. All the above contents should be added and mixed together in a large mixing bowl to a smooth consistancy much like warm peanut butter or pan cake batter. You want to pull the fish from the batter allowing a thin coat to remain as any excess drips back into the bowl. Now this is not just a recipe for frying fish this is a recipe for fishing. Once "she " tastes this she will want you out fishing all the time. Remember keep it fresh and the freezer empty. I like to include my favorite home made wine right here from central illinois, produced by Gene Sweeney of Brimfield, Il. This rhubarb wine is a great after dinner selection to complement a lemon zest cookie recipe my daughter Sidney has perfected. A light combination of sweet that helps clear up any lingering oil from the Fried fish. I hope you enjoy this simple Recipe, OHH and don't forget the most important ingredients Family and Friends.
