RECIPES DESSERTS Posted Jan 23, 2014 By: wfn Cinnamon and Lemon Shortbread Prep Time: 25 mins Cook Time: 1 hour Makes: 8 – 10 biscuits Valentine Warner bakes up a batch of shortbread for a quick snack on the lake while fishing. Ingredients 1 lemon, zest only 3 tsp cinnamon Good pinch salt 90g golden caster sugar 150g Fridge cold butter, grated 200g sifted plain flour 100g semolina Method Preheat the oven to 150c. Grate the lemon zest into a large mixing bowl. Add the cinnamon, salt, and sugar then grate in the cold butter (grating makes it easier to mix). Beat the mixture together with a wooden spoon. Sift in the flour and add the semolina. Use the wooden spoon to initially mix it all together then use your hands to form a smooth dough. Either roll out the shortbread on a floured surface and cut into thick slices or shape straight into baking moulds. Place on a baking tray, and cook for approximately 1 hour.
