This broiled lemon pepper fish recipe will get the job done Serves 4 Ingredients: 1 1/2 pounds fish fillets, (such as catfish or tilapia) 1/3 cup light mayonnaise 1 tablespoon grated lemon rind 1/2 teaspoon cracked black pepper 1/4 teaspoon salt Lemon wedges Directions: Arrange fish in single layer on foil-lined rimmed baking sheet; set aside. In bowl, stir together mayonnaise, lemon rind, pepper and salt; spread over fish. Broil fish about 8 inches (20 cm) from heat until golden brown on top and fish flakes easily when tested, about 10 minutes. Serve with lemon wedges.
