RECIPES SALMON By: Kevin Linkie Blackened Salmon Recipe A nice flaky fish covered in delicious spices and baked with a maple syrup glaze (Photo courtesy of Kevin Linkie) Ingredients: Salmon 1 teaspoon cinnamon 2 tablespoons cumin 2 tablespoons brown sugar 1 tablespoon oregano 2 tablespoons garlic powder 2 tablespoons salt 2 tablespoons pepper Maple syrup Directions: If using fresh salmon, pat dry and remove excess moisture from both sides, leaving skin on. Mix ingredients together and generously rub both sides of salmon. If you find you run out of the rub, just double the batch. Place fish skin side down on a flat sheet lined with parchment paper. Bake at 400 degrees F for 10 minutes. Open the oven and add enough maple syrup to cover the fish and place back in the oven and bake for another 10 to 15 minutes. Salmon is done when it flakes nicely.
