RECIPES STRIPED BASS By: Keith "Catfish" Sutton Baked White Bass with Spanish Sauce Recipe Try this tasty and easy-to-make baked white bass recipe with some added Spanish sauce Throw in some parsley for that perfect balance to this baked white bass recipe. (Keith Sutton photo) Serves: 4-6 Prep time: 20 minutes Cook time: 30-40 minutes Ingredients: 2 pounds white bass fillets 3 tablespoons minced onion 3 tablespoons minced celery 1 clove garlic, minced ¼ cup butter or margarine 2 tablespoons flour 3 cups canned tomatoes 2 teaspoons salt 1 teaspoon black pepper 2 teaspoons sugar ½ teaspoon dried thyme 1 tablespoon minced parsley Directions: 1. Arrange fillets in a single layer in a greased glass baking dish. 2. Sauté onion, celery and garlic in butter till tender. 3. Stir in flour until smooth. 4. Add remaining ingredients, and heat until boiling. 5. Pour over the fillets. 6. Bake at 450 degrees 30 to 40 minutes or until fish is easily flaked with a fork.
