ALL Posted Nov 04, 2014 Recipe: Ceviche Dave Pasternack, host of new World Fishing Network Show Pesca, gives us an exclusive look on how he prepares a Peruvian Ceviche (“el tigre –kiss of the tiger”) using tautog. Ceviche is a seafood dish made from fresh raw fish cured in citrus juices. The ingredients needed to make this dish are raw tautog, lemon juice, lime juice, spring onions (also known as ramps), green onions, pickled jalapenos and olive oil. The citric acid from the lemon and lime juice sufficiently cooks the fish to make it safe for eating. Simply mix all the ingredients except for the olive oil in a bowl with the pieces of fish and then stab the fish with a fork to allow the marinade to penetrate it. Add a generous dash of olive oil to the mix and let it sit for a few minutes - then your ceviche is ready!
