Let me tell you another way of cooking it – pan seared. You will need a non-stick skillet, lemon, butter, pepper, salt and parsley. Crappie should be filleted and soaked overnight in saltwater, if caught fresh. Heat the pan on high to melt the butter, just as it starts caramelize, reduce heat to just under medium. Place the crappie in the skillet and cook it on both sides until it flakes apart. My family loves to make toasted crappie sandwiches with mayonnaise for a quick meal. For a sit-down meal, we like pan seared crappie with rice and vegetables. Crappie aren't only fun to catch, they are great to eat as well. Tight lines and God bless.
